First post: Charset issue – suspected server problem affecting web pages

About my server (run because of the wonderful folk with Media Temple) that will serves my web page Pixelsurgeon (which is currently undergoing a redesign) the DefaultCharset in the primary httpd. conf is actually ISO-8859-1, but I’m wondering if it needs to be set to UTF-8.
